Tannourine, Lebanon
Our story
Two brothers, one village, one way of cooking
Our parents opened their restaurant in Tannourine, high in the mountains of North Lebanon, in 1990. It is still one of the best-loved places to eat in the north of the country. Zufa is what happened when my brother and I brought that kitchen to London.
The rules have not changed. Everything is made from scratch, every day: the bread on the saj, the mezze, the marinades, the syrups for the sweets. What has changed is the postcode.

Three things Zufa is known for
- 01Home-made saj breadBaked to order on a domed iron griddle the way it is in the mountains, filled with zaatar, cheese or kafta, then chargrilled and served on olive-wood boards cut in Lebanon.Zaatar · Jibneh · Kafta-jibneh
- 02Hot mezze in clay pansSambousek, kebbeh, jawaneh, arayes and sojok arrive sizzling in handmade clay pans, so the last bite is as warm as the first.Kebbeh · Sambousek · Jawaneh
- 03The charcoal grillShish taouk, kafta meshwi, lamb cutlets and free-range baby chicken, marinated overnight and grilled over charcoal to order.Shish taouk · Castaletta · Mixed grill

Mezze first, then the grill. Lebanese meals are built to be shared, so bring people.
